The steel used for the production of Guardini oven moulds is a very elastic material, fundamental feature for moulding the moulds during production. This guarantees high performance of the mould in baking.
The non-stick coating contains PTFE (polytetrafluoroethylene), which was discovered more than 80 years ago, in 1938, and has been used as a non-stick coating for cookware since the 1950s. This fluoropolymer has unique properties, being non-stick to water and oil, thermally stable and resistant to chemicals. Due to these properties, PTFE is used in many important medical and industrial applications, e.g. in surgery or in the food industry.
PTFE is safe and is applied to baking moulds with "coil coating" technology.
It is able to give the pan excellent non-stick performance in the long term, ensuring a longer life cycle to the baking moulds.
PTFE is a non-toxic material whose particles are harmless, inert and are not absorbed by the body or food. Its properties have made it the subject of study by many experts, such as, among others, Franco Battaglia, Professor of Environmental Chemistry at the University of Modena, and Gianni Fochi, Professor of Chemistry at the Scuola Superiore Normale di Pisa, which assessed the health and environmental safety of non-stick coatings.
Airc and the American Cancer Society have also commented on this.
The production of technologies such as non-stick cookware and baking moulds is largely regulated at European and National level by a dense regulatory and legislative apparatus, strictly applied by industry professionals and verified by competent authorities. In addition, the industry evolved with new scientific developments over the years with new scientific evidence, proposing products that are completely healthy.

The per-and polyfloroalkyl substances, better known by the acronym PFAS, contains thousands of chemical compounds that, due to their particular physical and chemical properties, are used in the production in many sectors, from transport to medical equipment, from clothing to coatings used for cooking food, to give water-repellent and oil-repellent properties.
PFAS are usually automatically associated with health and environment concerns, but not always relevant to the context.
The large definition of PFAS can be confusing: according to the OECD (The Organisation for Economic Co-operation and Development), "PFAS is any substance that contains at least one carbon of methyl (CF3-) or methylene (-CF2-) completely fluorinated (without any H/Cl/Br/I attached to it)".
More than 10.000 substances fall within such a broad definition: a variety of chemical compounds that have extremely varied properties. The reason why such a heterogeneous set of substances is grouped and identified as PFAS is due to the common characteristics of persistence, which, however, is not always a risk.
A particular type of PFAS are fluoropolymers such as PTFE, substances used in high-tech applications including, since the 1950s, non-stick coatings of pots and pans. Research on the safety of fluoropolymers to date has consistently found that they, unlike other PFAS, present no risk to human health when used in articles in contact with food and water.
Guardini baking moulds have always been subjected to chemical analysis to ascertain their suitability for food contact and product safety.

Bisphenol A (BPA) has been banned from production and is replaced in our moulds by a BPA FREE coating. This replacement element has significantly improved the quality of the non-stick coatings, as it creates a barrier between the substrate of the baking mould and the coating, which improves its food contact performance. The non-stick properties are better and more performing.
Thanks to the non-stick coating of the moulds, it is allowed to cook with less fat, for the benefit of health, just grease and lightly oil the molds to have excellent non-stick results.
